Dark Chocolate Mint Cupcakes With Vanilla Buttercream

So I have been on a baking haitus lately & wanted to bake something to take into work tomorrow. I got my inspiration from fellow blogger Em at The Repressed Pastry Chef. Love her blog, her pictures & her recipes....especially her version of buttercream frosting. So tonight I made the cake recipe off the back of the Hershey's Dark Cocoa, put a little mint extract in (could have used a tad bit more) and then topped with vanilla buttercream tinted green. For the sprinkles on top I bought an Oreo pie crust & crumbled it up & used for the final touch. Mmmm these are really really good. Very rich and chocolately with a slight hint of mint. Definitely want a big glass of cold milk on hand.

Oh yay! Glad it worked out for you. I actually really DO like the chocolate cake recipe on the back of the Hershey's Cocoa Powder. I usually make it with Hershey's Special Dark Cocoa Powder since I'm a fan of dark chocolate. Love the Oreo topping idea!

Also glad you like that Buttercream icing recipe. It's a definite winner in my book. Another I've posted and really love is in my post about Chiffon Cupcakes with Rose Buttercream icing... and the Raspberry Cream Cake post. It's another really good, but much softer, buttercream.

Congrats on the cupcakes - hope you enjoyed the glass of milk :)

Have a delicious day!

Glad to see you posting again.

I have other "go to" choc/mint stuff I love so probably won't attempt this one...especially since I'm trying not to bake as much. But I'm sure if it came from her it's a hit in everyone's book.

Also wanted to tell you I DID tweak the thai chili cupcakes into a blondie and they were a huge hit. They'll be going with me to Philly in a couple weeks for a half marathon!

Megan-Thought I'd give you this link...sorry for commenting it, I don't have your email address. I thought since you enjoy sweet and spice together you might like it.
